Process

From cherry to container.

Zoebar Business Group owns the washing station in Amaro, Ethiopia. Cherry intake, processing method, drying and lot formation are controlled directly, which is what makes the process record attached to a lot an operational record rather than a supplier's claim.

Harvest

Seven stages.

  1. 01

    Cherry intake

Cherry is delivered to Zoebar's own washing station in Amaro during the harvest window and assessed on arrival.

  2. 02

    Sorting

Density and defect separation before processing, so underripe and damaged cherry does not enter the lot.

  3. 03

    Processing

Washed or natural, decided and recorded per lot. In washed processing the fruit is removed before drying; in natural processing the cherry dries whole.

  4. 04

    Drying

Raised beds, turned and monitored through to target moisture. Drying time varies with method and weather.

  5. 05

    Grading and cupping

Quality assessment before a lot is released, producing the grade and cupping record carried on the lot page.

  6. 06

    Lot formation

The lot record closes: origin, process, harvest, quality and the producers connected to it.

  7. 07

    Export

Documentation, inspection and shipment. Incoterms and port of loading are confirmed per contract.

Two methods

What is the difference between washed and natural processing?

In washed processing the fruit is removed from the coffee seed before drying. In natural processing the cherry dries whole with the fruit intact. Zoebar produces both at its own Amaro washing station in Ethiopia, and which method applies is recorded per lot rather than assumed across the harvest.

Washed

Fruit removed from the seed before drying.

Natural

Cherry dries whole, with the fruit intact.
